Ingredients

  • 1 tablespoon organic chia seeds
  • a pinch salt
  • 1 cup hot water
  • 2 tablespoons coconut milk
  • 5 drops vanilla stevia

Instructions

  1. Combine chia seeds and salt in a mason jar.
  2. Rest the mason jar on a kitchen towel.
  3. Pour hot water over the chia seeds and stir with a fork.
  4. Let the mixture sit at room temperature for 4 hours to overnight.
  5. Add coconut milk and stevia to the mixture.
  6. Seal the jar and shake vigorously.
  7. Serve the pudding.
