Instructions
- Whisk chia seeds with ½ cup of coconut milk in a small bowl.
- Add vanilla, salt, and the remaining coconut milk, then whisk together.
- Sweeten to taste with your chosen liquid sweetener.
- Refrigerate and stir well after 30 minutes to prevent clumping.
- Let it sit in the fridge overnight.
- Layer the thickened chia pudding with 1 tablespoon of sugar-free jam in a serving bowl or small jar.
