Ingredients

The salad

  • 1 cup bulgur, extra-coarse
  • 1 unit red onion
  • 5 to 6 units scallions
  • 1 small bunch chives
  • 1 unit English cucumber
  • 1 to 2 cups cherry tomatoes
  • 1 bunch parsley
  • ¼ cup mint

The dressing

  • ¼ cup extra-virgin olive oil
  • 2 to 3 units lemons
  • to taste unit kosher salt
  • to taste unit freshly cracked black pepper

Instructions

  1. Soak the bulgur in cold water for one hour and then drain.
  2. Finely dice the onion and mince the scallions, chives, cucumber, parsley, and mint.
  3. In a large bowl, combine the soaked bulgur with the chopped vegetables and herbs.
  4. Add olive oil, lemon juice, salt, and pepper to the bowl and toss well.
  5. Taste and adjust seasoning as necessary.
