Instructions
- Soak the bulgur in cold water for one hour and then drain.
- Finely dice the onion and mince the scallions, chives, cucumber, parsley, and mint.
- In a large bowl, combine the soaked bulgur with the chopped vegetables and herbs.
- Add olive oil, lemon juice, salt, and pepper to the bowl and toss well.
- Taste and adjust seasoning as necessary.
