Sweet Bell Pepper Salad

The salad

mixed bell peppers, sliced

fennel, sliced thinly

The dressing

Instructions
- If using strong onions, slice and soak them in diluted vinegar for 10-15 minutes, then drain.
- Slice the bell peppers, fennel, and onions, and add them to a serving bowl.
- Mix the dressing ingredients, rubbing the herbs to release their flavor.
- Toss the salad with the dressing, adjust seasoning to taste, and gently fold in the feta cheese.
- Serve cold, preferably after letting it sit in the refrigerator for an hour.
