Ingredients

The salad

  • 1 pound mixed bell peppers, sliced
  • 1 bulb fennel, sliced thinly
  • 2 ounces onion, sliced thinly
  • 2 ounces feta cheese, crumbled
  • ½ teaspoon garlic, minced

The dressing

  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons Champagne vinegar (or rice wine vinegar)
  • ½ teaspoon Fines Herbs (or your favorite herbs)
  • ¼ teaspoon salt
  • 1 pinch pepper

Instructions

  1. If using strong onions, slice and soak them in diluted vinegar for 10-15 minutes, then drain.
  2. Slice the bell peppers, fennel, and onions, and add them to a serving bowl.
  3. Mix the dressing ingredients, rubbing the herbs to release their flavor.
  4. Toss the salad with the dressing, adjust seasoning to taste, and gently fold in the feta cheese.
  5. Serve cold, preferably after letting it sit in the refrigerator for an hour.
