Ingredients

The salad

  • 4 pieces bell peppers (1 orange, 1 red, 1 yellow, 1 green)
  • 4 pieces Lebanese cucumbers
  • 1 cup jumbo Kalamata olives
  • ½ lb Goat Feta Cheese
  • ½ cup organic walnuts
  • ½ cup parsley
  • 2 pieces green onions

The vinaigrette

  • ¼ cup extra-virgin olive oil
  • 2 tbsp white wine vinegar
  • 2 cloves garlic
  • ½ tsp Himalayan salt
  • ½ tsp ground black pepper
  • 1 tbsp dried oregano
  • 1 tbsp za'atar
  • 1 tbsp sumac

Instructions

  1. Prep all the vegetables and add them to a large mixing bowl.
  2. In a separate bowl, whisk together all the vinaigrette ingredients until well combined.
  3. Pour the vinaigrette over the salad, mix well, and serve immediately.
  4. For best results, enjoy the salad the same day, but it can be stored in the refrigerator for a couple of days.
