Scallion Oil Noodles

Ingredients

The noodles

  • 8 oz fresh noodles or ramen noodles

The sauce

  • 3 tablespoons cooking oil
  • 2 stalks scallions, roots trimmed and cut into strips
  • 1 tablespoon oyster sauce
  • 1 teaspoon soy sauce

Instructions

  1. Heat the cooking oil in a wok until it begins to smoke.
  2. Add the scallion strips and stir continuously until they are aromatic and moderately burned.
  3. Set aside the scallion oil.
  4. Boil water in a pot and cook the fresh noodles until al dente.
  5. Drain the noodles and transfer them to a bowl.
  6. Add the scallion oil, oyster sauce, and soy sauce to the noodles.
  7. Toss the noodles with chopsticks to blend well and serve immediately.
