The sauce

scallions, roots trimmed and cut into strips

Instructions
- Heat the cooking oil in a wok until it begins to smoke.
- Add the scallion strips and stir continuously until they are aromatic and moderately burned.
- Set aside the scallion oil.
- Boil water in a pot and cook the fresh noodles until al dente.
- Drain the noodles and transfer them to a bowl.
- Add the scallion oil, oyster sauce, and soy sauce to the noodles.
- Toss the noodles with chopsticks to blend well and serve immediately.
