Ingredients

The noodles

  • 4 oz cellophane noodles

The vegetables

  • 1 small onion
  • 5 whole fresh shiitake mushrooms
  • 3 mini carrots
  • 2 oz bean sprouts
  • 1 oz cabbage
  • 1 stalk scallion

The sauce and oil

  • 2 tablespoons vegetable oil
  • ¼ cup water
  • 1 tablespoon oyster sauce
  • ¼ teaspoon white pepper

Instructions

  1. Soak the noodles in warm water until soft, about 15 minutes, then drain.
  2. Heat a wok over medium heat and add the oil.
  3. Stir-fry the onion until fragrant, then add mushrooms, carrots, bean sprouts, and cabbage until slightly wilted.
  4. Add water, oyster sauce, and white pepper, stirring to combine.
  5. Add the drained noodles and stir continuously until cooked through.
  6. Toss in the scallions, stir quickly, and serve immediately.
