Vegetable Chow Mein

Ingredients

The noodles

  • 8 oz fresh egg noodles

The vegetables

  • 6 pieces fresh shiitake mushrooms
  • 2 oz cabbage
  • ½ small carrot
  • 4 oz bean sprouts
  • 2 stalks scallion

The seasonings

  • 3 tablespoons oil
  • 3-4 cloves garlic
  • 2 tablespoons soy sauce
  • ¼ teaspoon dark soy sauce (optional)
  • 1 tablespoon sugar
  • ½ teaspoon sesame oil
  • 3 tablespoons water
  • 3 dashes white pepper powder
  • to taste salt
  • 1 tablespoon garlic chili sauce

Instructions

  1. Prep the noodles according to the packaging instructions.
  2. Heat a wok or pan over high heat and add the oil.
  3. Stir-fry the garlic until aromatic, then add the mushrooms.
  4. Add the cabbage and carrot, stirring continuously.
  5. Add the noodles along with soy sauce, dark soy sauce, sugar, sesame oil, water, white pepper, and salt. Stir and toss for about 1 minute.
  6. Add the bean sprouts and stir to combine well.
  7. Once the bean sprouts are cooked, add the scallions and stir a few more times.
  8. Serve immediately with garlic chili sauce.
