Shrimp Chow Mein

Ingredients

The noodles and shrimp

  • 8 oz fresh egg noodles
  • 6 oz shrimp, shelled and deveined

The vegetables

  • 2 tablespoons oil
  • 2 cloves garlic, finely minced
  • 2 oz cabbage, finely sliced
  • 4 oz bean sprouts, rinsed and drained
  • 1 stalk scallion, cut into 2-inch lengths

The sauce

  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • ½ teaspoon sesame oil
  • 3 tablespoons water
  • 1 pinch salt

Instructions

  1. Prepare the noodles according to the package instructions.
  2. In a small bowl, combine all the sauce ingredients and mix well.
  3. Heat a wok or skillet over high heat and add the oil.
  4. Add the garlic and stir-fry until aromatic, then add the shrimp.
  5. Stir-fry the shrimp until half cooked, then add the cabbage and stir continuously.
  6. Add the noodles and the sauce, then stir, toss, and flip the noodles for about 1 minute.
  7. Add the bean sprouts and stir to combine well.
  8. Once the bean sprouts are cooked, add the scallions, stir a few more times, then serve immediately.
