Hong Kong Chow Mein

Ingredients

The noodles

  • 8 oz chow mein or fresh egg noodles

The vegetables

  • 4 oz bean sprouts
  • 1 oz yellow chives

The seasonings

  • 2 ½ - 3 tablespoons cooking oil
  • 2 tablespoons soy sauce
  • ¾ teaspoon oyster sauce
  • ½ tablespoon sugar
  • ¼ teaspoon sesame oil
  • teaspoon dark soy sauce (optional)
  • ½ teaspoon Shaoxing wine (optional)
  • 3 dashes white pepper
  • white sesame seeds (for topping)

Instructions

  1. Rinse and soak the noodles according to the package instructions, then drain.
  2. Mix all the seasoning ingredients in a small bowl until well combined.
  3. Heat a wok over high heat and add the cooking oil, letting it heat up.
  4. Loosen the noodles and add them to the wok, using chopsticks to stir and toss.
  5. Add the seasoning mixture to the wok and combine well with the noodles.
  6. Add the bean sprouts and yellow chives, stirring until they are cooked but still crunchy.
  7. Remove from heat, dish out the noodles, and top with white sesame seeds before serving.
