Instructions
- Blanch the egg noodles in hot water or par-boil them, then rinse with cold water and let air dry for 1 hour.
- Soak the dried shiitake mushrooms in hot water until softened, then slice them.
- Marinate the pork with the marinade ingredients and set aside.
- Mix all the ingredients for the chow mein sauce and set aside.
- Heat oil in a wok and shallow fry the noodles until golden brown and crispy on both sides.
- Remove the crispy noodles and drain excess oil on paper towels.
- In the same wok, add ginger, mushrooms, and pork, and stir-fry until the pork is cooked.
- Add bean sprouts and yellow chives, then stir in the chow mein sauce until it thickens.
- Serve the pork and sauce over the crispy noodles.
