Shrimp Chow Mein

Ingredients

  • 1 tablespoon vegetable oil
  • 1 pound peeled and deveined shrimp
  • 2 packages refrigerated yakisoba noodles (approximately 11 ounces total)
  • ¼ cup sliced green onion tops
  • ½ cup julienned carrots
  • ½ cup thinly sliced white or yellow onion
  • ¼ cup thinly sliced celery
  • 1 cup shredded green cabbage
  • ¼ cup soy sauce
  • 1 tablespoon honey
  • 2 teaspoons minced fresh ginger
  • 1 teaspoon minced fresh garlic
  • 2 teaspoons toasted sesame oil
  • to taste salt and pepper

Instructions

  1. Heat half of the oil in a large pan over high heat and cook the white onion until it starts to brown.
  2. Add the carrots and celery, cooking until they soften.
  3. Stir in the cabbage with some water and cook until wilted.
  4. Remove the vegetables from the pan and set aside.
  5. Heat the remaining oil in the pan and cook the shrimp until pink and opaque.
  6. Return the vegetables to the pan with the shrimp.
  7. Prepare the yakisoba noodles by running them under hot water until loosened, then add to the pan.
  8. Mix soy sauce, honey, ginger, garlic, and sesame oil in a bowl and pour over the noodle mixture, tossing to coat.
  9. Add green onions and cook for an additional 1-2 minutes.
  10. Serve immediately.
