Chicken Chow Mein

Instructions
- Prepare the noodles according to the package directions.
- In a bowl, whisk together soy sauce, oyster sauce, sugar, and sesame oil, then set aside.
- Heat oil in a wok or large non-stick skillet over moderately high heat.
- Add the chicken, ensuring space between pieces, and cook for 3-4 minutes.
- Turn the chicken and cook until done, about 2-3 minutes longer, then transfer to a plate.
- Reduce heat slightly, add remaining oil, and sauté celery for 3 minutes.
- Add cabbage and sauté for 2 minutes, then add carrots, green onions, garlic, and ginger, sautéing for 1-2 minutes until veggies are crisp-tender.
- Toss in the noodles and chicken, pour the soy sauce mixture over, and toss to coat. Serve warm.
