Ingredients

The noodles

  • 1 lb refrigerated yakisoba or chow mein noodles

The chicken

  • 1 lb boneless skinless chicken breasts, sliced into ½-inch thick strips

The vegetables

  • 1 cup thinly sliced celery (about 3 stalks)
  • 3 cups thinly sliced green cabbage
  • cups matchstick carrots
  • cup chopped green onions (about 5)
  • 2 tsp minced ginger
  • 2 cloves garlic, minced

The seasonings

  • 4 Tbsp low-sodium soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp granulated sugar
  • tsp sesame oil
  • 3 Tbsp vegetable oil

Instructions

  1. Prepare the noodles according to the package directions.
  2. In a bowl, whisk together soy sauce, oyster sauce, sugar, and sesame oil, then set aside.
  3. Heat oil in a wok or large non-stick skillet over moderately high heat.
  4. Add the chicken, ensuring space between pieces, and cook for 3-4 minutes.
  5. Turn the chicken and cook until done, about 2-3 minutes longer, then transfer to a plate.
  6. Reduce heat slightly, add remaining oil, and sauté celery for 3 minutes.
  7. Add cabbage and sauté for 2 minutes, then add carrots, green onions, garlic, and ginger, sautéing for 1-2 minutes until veggies are crisp-tender.
  8. Toss in the noodles and chicken, pour the soy sauce mixture over, and toss to coat. Serve warm.
