The Noodles and Vegetables

white-fleshed sweet potato or 6 medium carrots

yellow onion

fresh shiitake mushrooms

piece of ginger

scallions
cut diagonally

baby spinach

teaspoon
crushed red pepper flakes (optional)
Instructions
- Combine chicken with 1 tablespoon avocado oil and 1 tablespoon coconut aminos in a bowl and set aside.
- Heat a skillet over medium heat and add 2 tablespoons avocado oil.
- Fry spiralized sweet potato noodles for 2-3 minutes until browned, then flip and cook for another 2-3 minutes.
- Transfer the noodles to a serving dish.
- In the same skillet, add 2 tablespoons avocado oil and sauté sliced onions with salt for 3-5 minutes.
- Add mushrooms and ginger, stir-frying for about 2 minutes.
- Add chicken and cook until no longer pink.
- Stir in scallions, spinach, coconut aminos, and red pepper flakes, adjusting seasoning as needed.
- Plate the chicken and veggies on top of the noodles.
