Chicken Chow Mein

Ingredients

The Chicken

  • 1 pound boneless skinless chicken thighs
  • 5 tablespoons avocado oil
  • 2 tablespoons coconut aminos
  • 1 teaspoon aged balsamic vinegar
  • 1 teaspoon fish sauce
  • ½ teaspoon toasted sesame oil
  • 2 teaspoons arrowroot powder
  • ½ teaspoon kosher salt

The Noodles and Vegetables

  • 1 pound white-fleshed sweet potato or 6 medium carrots
  • 1 small yellow onion
  • ¼ pound fresh shiitake mushrooms
  • 1 inch piece of ginger
  • 2 scallions cut diagonally
  • 5 ounces baby spinach
  • ½ teaspoon crushed red pepper flakes (optional)

Instructions

  1. Combine chicken with 1 tablespoon avocado oil and 1 tablespoon coconut aminos in a bowl and set aside.
  2. Heat a skillet over medium heat and add 2 tablespoons avocado oil.
  3. Fry spiralized sweet potato noodles for 2-3 minutes until browned, then flip and cook for another 2-3 minutes.
  4. Transfer the noodles to a serving dish.
  5. In the same skillet, add 2 tablespoons avocado oil and sauté sliced onions with salt for 3-5 minutes.
  6. Add mushrooms and ginger, stir-frying for about 2 minutes.
  7. Add chicken and cook until no longer pink.
  8. Stir in scallions, spinach, coconut aminos, and red pepper flakes, adjusting seasoning as needed.
  9. Plate the chicken and veggies on top of the noodles.
