Ingredients

  • 1 tablespoon vegetable oil
  • ¾ pound boneless skinless chicken breasts, cut into 1 inch pieces
  • 6 ounces dry chow mein noodles
  • ½ cup thinly sliced yellow onion
  • ½ cup shredded or julienned carrots
  • ¼ cup thinly sliced celery
  • 1 teaspoon minced garlic
  • 1 cup shredded cabbage
  • ¼ cup soy sauce
  • 2 teaspoons honey
  • 1 tablespoon sesame oil
  • ¼ cup sliced green onion tops (only the dark green part)
  • to taste salt
  • to taste black pepper

Instructions

  1. 1. Boil water and cook the chow mein noodles according to package instructions.
  2. 2. Heat oil in a large pan over medium-high heat, add chicken, and season with salt and pepper. Cook until golden brown.
  3. 3. Add onions, carrots, and celery to the pan and cook until softened.
  4. 4. Stir in garlic and cook for an additional 30 seconds.
  5. 5. Add the cooked noodles and cabbage to the pan, tossing to combine.
  6. 6. In a small bowl, whisk together soy sauce, honey, and sesame oil, then pour into the pan.
  7. 7. Stir until the sauce evenly coats the noodles, then add green onion tops and cook until wilted.
  8. 8. Serve immediately.
