Chicken Lo Mein

Instructions
- Heat the vegetable oil in a large pan over medium-high heat.
- Add the chicken slices and season with salt and pepper, cooking until golden brown for 3-4 minutes per side.
- Remove the chicken from the pan and add the onions, carrots, celery, and cabbage, cooking until just softened.
- Add the minced garlic and cook for an additional 30 seconds.
- Add the pre-cooked noodles and the cooked chicken to the pan, tossing to combine.
- In a small bowl, whisk together the chicken broth, hoisin sauce, soy sauce, sesame oil, and cornstarch.
- Pour the sauce into the pan and bring to a simmer, cooking for 1 minute until the sauce thickens.
- Sprinkle with green onion tops before serving.
