Ingredients

Stir-Fry Sauce

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon rice wine vinegar or distilled white vinegar
  • 1 tablespoon ketchup
  • 2 teaspoons chopped ginger
  • 1 teaspoon dark sesame oil

Lo Mein

  • 12 ounces Chinese Lo Mein noodles or linguine pasta
  • 2 pieces boneless skinless chicken breasts
  • 1 tablespoon vegetable oil
  • 1 large onion
  • 1 ½ cups shredded carrots
  • 1 cup sliced fresh mushrooms
  • 1 cup broccoli florets
  • to taste unsalted dry-roasted peanut halves (optional)

Instructions

  1. Whisk all stir-fry sauce ingredients together in a bowl.
  2. Cook the noodles according to package directions, then drain and set aside.
  3. Heat vegetable oil in a skillet over medium heat and add chopped onion.
  4. Slice chicken into strips and add to the skillet, raising heat to medium-high.
  5. Add carrots, broccoli, and mushrooms, stirring until chicken is cooked through.
  6. Add the stir-fry sauce and noodles, cooking until heated through and well coated.
  7. Serve garnished with peanut halves if desired.
