Ingredients

The potatoes

  • 1.5 pounds red potatoes

The broth and seasonings

  • 1 cup reduced-sodium vegetable broth
  • 2 teaspoons dried Italian seasoning or dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon sea salt
  • ¼ teaspoon ground black pepper

The fat

  • 2 tablespoons butter or ghee

Instructions

  1. Wash and pat dry the potatoes, then cut them in half or quarters.
  2. Add the halved potatoes, broth, Italian seasoning, garlic powder, sea salt, and black pepper to the Instant Pot and stir gently.
  3. Place the butter on top, lock the lid, and set the timer to 7 minutes on high pressure.
  4. Once cooking is complete, use the quick release to release the pressure and remove the lid.
  5. Stir the potatoes and transfer them to a serving dish. Serve hot.
