Ingredients

The potatoes

  • 4 medium russet potatoes

The seasoning

  • 1 teaspoon olive oil
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Place a metal rack in the Instant Pot and add 1 cup of water.
  2. Poke 4-6 holes into each potato using a fork or knife.
  3. Drizzle each potato with olive oil and season with salt and pepper.
  4. Transfer the potatoes onto the metal rack and cover the Instant Pot.
  5. Cook the potatoes on high pressure for 18 minutes.
  6. Naturally release the pressure for 5 minutes, then quick release the remaining pressure.
  7. Check if the potatoes are fork-tender; if not, cook for an additional 3-5 minutes.
  8. Serve immediately with desired toppings.
