Instructions
- Place the metal trivet in the Instant Pot and pour in the water.
- Scrub the potatoes and pierce them several times with a fork or knife.
- Place the potatoes on the trivet and close the lid, sealing the vent.
- Set the cooking time based on potato size: 10 minutes for small, 15 for medium, 20 for large, and 25 for extra-large.
- After cooking, let the pot sit for 10 minutes for natural release, then manually release any remaining steam.
- Check the potatoes for doneness; if not soft, cook for a few more minutes.
- Optionally, rub with oil and salt, then bake in a 400° oven for 5-10 minutes to crisp the skin.
- Slit the potatoes open and add desired toppings before serving.
