Ingredients

The potatoes

  • 1 - 8 potatoes scrubbed

The water

  • 1 ½ - 2 cups cold water

Optional (To Crisp Skin)

  • to taste olive oil or vegetable oil
  • to taste salt

Instructions

  1. Place the metal trivet in the Instant Pot and pour in the water.
  2. Scrub the potatoes and pierce them several times with a fork or knife.
  3. Place the potatoes on the trivet and close the lid, sealing the vent.
  4. Set the cooking time based on potato size: 10 minutes for small, 15 for medium, 20 for large, and 25 for extra-large.
  5. After cooking, let the pot sit for 10 minutes for natural release, then manually release any remaining steam.
  6. Check the potatoes for doneness; if not soft, cook for a few more minutes.
  7. Optionally, rub with oil and salt, then bake in a 400° oven for 5-10 minutes to crisp the skin.
  8. Slit the potatoes open and add desired toppings before serving.
