Instant Pot Potatoes with Herb Butter

Ingredients

The potatoes

  • 3 lbs Gold Potatoes or Red Potatoes, cut in half
  • ½ cup Water (or broth)

The herb butter

  • ½ cup Butter, sliced
  • ½ teaspoon Dried Basil
  • ½ teaspoon Rosemary, dried, or 1 tsp fresh
  • ½ teaspoon Onion Powder
  • ¼ teaspoon Pepper
  • ¾ teaspoon Kosher Salt (coarse salt) or ½ tsp table salt
  • 4 cloves Garlic, pressed or finely minced

Garnish

  • cup Grated Parmesan Cheese
  • 1 Tablespoon Parsley

Instructions

  1. 1. Turn on the Sauté setting of the pot and add the butter slices until melted.
  2. 2. Add basil, rosemary, onion powder, pepper, salt, and garlic, stirring for about 20 seconds.
  3. 3. Toss the potatoes in the butter until coated.
  4. 4. Pour in the water or broth and cancel the sauté setting.
  5. 5. Seal the lid and set the steam release knob to Sealing.
  6. 6. Press Pressure Cook/Manual and set the timer for 7 minutes.
  7. 7. After cooking, turn the steam release knob to Venting for a Quick Release.
  8. 8. Open the lid and gently stir the potatoes.
  9. 9. For crispier potatoes, broil them on a baking sheet for a few minutes, turning once.
  10. 10. Garnish with parmesan, parsley, and reserved buttery sauce.
