Ingredients

The cookies

  • 2 cups old-fashioned rolled oats
  • 1 cup flour
  • 2 tablespoons ground flax
  • ½ teaspoon baking soda
  • ½ teaspoon coarse salt
  • ½ teaspoon ground cinnamon
  • cup oil
  • ½ cup brown sugar
  • 2 large eggs
  • cup vanilla yogurt
  • 2 teaspoons pure vanilla extract

Mix-ins and toppings

  • 2-3 tablespoons dark chocolate chips
  • 2-3 tablespoons unsweetened coconut flakes
  • ½ small banana, smashed
  • ¼ cup blueberries
  • 2 tablespoons peanut butter
  • 2 tablespoons strawberry preserves
  • ¼ cup dried cranberries
  • ¼ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, mix oats, flour, flax, baking soda, salt, and cinnamon.
  3. In another bowl, whisk oil and brown sugar until fluffy, then add eggs, yogurt, and vanilla extract.
  4. Combine the dry ingredients with the wet ingredients until just mixed.
  5. Scoop the dough onto the baking sheet, spacing them about 1 inch apart, and add toppings as desired.
  6. Bake for 8-10 minutes, then cool before storing.
