Ingredients

The latte base

  • 2 cups almond milk
  • 2 tbsp canned pumpkin or butternut squash
  • 1-2 tbsp sugar
  • 1.25 tbsp pure vanilla extract
  • ¾ tsp cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp nutmeg

The coffee

  • ¼ cup freshly brewed espresso
  • cup strong coffee

Instructions

  1. Combine almond milk, pumpkin, and sugar in a saucepan and heat on medium until steaming.
  2. Bring the mixture to a boil and stir in vanilla, cinnamon, ginger, and nutmeg.
  3. Optionally, blend the mixture for 15 seconds until foamy or whisk well if you don't have a blender.
  4. Pour in the espresso or strong coffee and stir to combine.
  5. Serve warm, optionally topped with cinnamon or whipped cream.
