Berry with Arugula and Prosciutto Pizza

Ingredients

The pizza crust

  • 1 batch store-bought or homemade pizza dough
  • 1 tablespoon extra virgin olive oil

The toppings

  • ½ cup fresh ricotta cheese
  • 8 ounces fresh mozzarella cheese, sliced
  • 12 pieces strawberries, sliced
  • ½ cup raspberries
  • 1 sprig fresh rosemary
  • 2 cups arugula leaves
  • 4 slices prosciutto
  • to taste Parmesan cheese ribbons
  • 2 sprigs fresh mint leaves
  • to taste flake sea salt
  • to taste red pepper flakes
  • as needed cornmeal

Instructions

  1. Preheat the oven and pizza stone or baking sheet to 475°F.
  2. Divide the pizza dough into 6 sections and stretch each to form a circle or oblong shape on a cornmeal-sprinkled surface.
  3. Brush the dough with olive oil and sprinkle with sea salt.
  4. Spread ricotta cheese on the crust, then layer with half of the mozzarella cheese.
  5. Top with half of the strawberries and raspberries, and sprinkle with fresh rosemary.
  6. Bake for 10-15 minutes until the cheese is melted and the crust is golden.
  7. Remove from the oven and top with arugula, torn prosciutto, and Parmesan ribbons.
  8. Add more rosemary, mint, a drizzle of olive oil, and season with flake sea salt and red pepper flakes if desired.
  9. Serve immediately.
