Instructions
- Prepare the pie dough and chill it in the refrigerator for at least 2 hours.
- Roll out the chilled pie dough and place it into a 9-inch pie dish, crimping the edges.
- Brush the edges with egg wash and line the crust with parchment paper and pie weights.
- Preheat the oven to 375°F (190°C) and partially blind bake the crust for 15 minutes.
- Remove the weights and prick the bottom of the crust, then bake for an additional 8 minutes.
- Reduce the oven temperature to 325°F (163°C).
- Melt the butter and chocolate together in a bowl, then let it cool slightly.
- In a separate bowl, whisk together the sugar, cocoa powder, espresso powder, and salt.
- Add the heavy cream, vanilla, eggs, and egg yolk to the dry ingredients and mix well.
- Whisk in the cooled chocolate mixture until smooth.
- Pour the filling into the pre-baked pie crust and bake for 50-55 minutes until set.
- Cool the pie for at least 2 hours before serving, and garnish with whipped cream if desired.
