Ingredients

Crust

  • 1 unbaked Buttery Flaky Pie Crust
  • 1 large egg white

Filling

  • ¼ cup unsalted butter
  • 2 ounces semi-sweet chocolate
  • 1 cup granulated sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon espresso powder
  • ¼ teaspoon salt
  • ¼ cup heavy cream
  • 1 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 large egg yolk
  • optional whipped cream

Instructions

  1. Prepare the pie dough and chill it in the refrigerator for at least 2 hours.
  2. Roll out the chilled pie dough and place it into a 9-inch pie dish, crimping the edges.
  3. Brush the edges with egg wash and line the crust with parchment paper and pie weights.
  4. Preheat the oven to 375°F (190°C) and partially blind bake the crust for 15 minutes.
  5. Remove the weights and prick the bottom of the crust, then bake for an additional 8 minutes.
  6. Reduce the oven temperature to 325°F (163°C).
  7. Melt the butter and chocolate together in a bowl, then let it cool slightly.
  8. In a separate bowl, whisk together the sugar, cocoa powder, espresso powder, and salt.
  9. Add the heavy cream, vanilla, eggs, and egg yolk to the dry ingredients and mix well.
  10. Whisk in the cooled chocolate mixture until smooth.
  11. Pour the filling into the pre-baked pie crust and bake for 50-55 minutes until set.
  12. Cool the pie for at least 2 hours before serving, and garnish with whipped cream if desired.
