Vegan Cranberry Cheese Tart

Ingredients

  • 2 sheets puffed pastry
  • ¼ cup olive oil
  • 2 cloves garlic, pressed
  • 8 tsp onion chutney
  • 8 tbsp vegan mozzarella cheese
  • 1½ - 2 cups fresh cranberries
  • 2 tbsp fresh thyme
  • to taste salt & pepper

Instructions

  1. Preheat the oven to 400°F and line two baking sheets with parchment paper.
  2. Combine olive oil and pressed garlic in a small bowl, season slightly, and let sit for 20 minutes.
  3. Cut thawed puffed pastry into 4 rectangles, brush with garlic-infused oil, and add onion chutney, vegan mozzarella, cranberries, and thyme.
  4. Pinch the edges with a fork, brush with more garlic-infused oil, and refrigerate for 1 hour.
  5. Bake for 25 minutes or until golden and crispy.
