Vegan Cranberry Cheese Tart

Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper.
- Combine olive oil and pressed garlic in a small bowl, season slightly, and let sit for 20 minutes.
- Cut thawed puffed pastry into 4 rectangles, brush with garlic-infused oil, and add onion chutney, vegan mozzarella, cranberries, and thyme.
- Pinch the edges with a fork, brush with more garlic-infused oil, and refrigerate for 1 hour.
- Bake for 25 minutes or until golden and crispy.
