Cranberry Brie Bites

Brie cheese, cut into cubes

Instructions
- Preheat the oven to 375°F and prepare a 24-cup mini-muffin tin with cooking spray.
- Cut the defrosted puff pastry into 24 equal squares and press each square into the muffin tin to form cups.
- If the pastry has warmed, chill the tin in the refrigerator for 10 minutes.
- Bake the pastry cups in the oven for 10 minutes.
- In a saucepan, cook the cranberries over medium heat for 5 minutes, stirring occasionally.
- Mix the hot water and cornstarch, then add to the cranberries along with sugar, stirring until thickened.
- After the pastry cups are baked, create a well in each cup and fill with cranberry sauce.
- Top each cup with a cube of Brie and a sprinkle of thyme, then bake for an additional 5-7 minutes until the Brie is melted.
- Let cool for a few minutes before removing from the tin.
