Cranberry Brie Bites

Ingredients

The pastry

  • 1 sheet frozen puff pastry, defrosted

The filling

  • 2 cups fresh cranberries
  • ¼ cup hot water
  • 2 teaspoons cornstarch
  • 2 tablespoons sugar
  • 2 oz Brie cheese, cut into cubes
  • to taste dried thyme

Instructions

  1. Preheat the oven to 375°F and prepare a 24-cup mini-muffin tin with cooking spray.
  2. Cut the defrosted puff pastry into 24 equal squares and press each square into the muffin tin to form cups.
  3. If the pastry has warmed, chill the tin in the refrigerator for 10 minutes.
  4. Bake the pastry cups in the oven for 10 minutes.
  5. In a saucepan, cook the cranberries over medium heat for 5 minutes, stirring occasionally.
  6. Mix the hot water and cornstarch, then add to the cranberries along with sugar, stirring until thickened.
  7. After the pastry cups are baked, create a well in each cup and fill with cranberry sauce.
  8. Top each cup with a cube of Brie and a sprinkle of thyme, then bake for an additional 5-7 minutes until the Brie is melted.
  9. Let cool for a few minutes before removing from the tin.
