Cranberry Brie Bites

Ingredients

The cranberry filling

  • 1 cup fresh cranberries
  • 3 tablespoons orange juice
  • 2 tablespoons water
  • 1 tablespoon honey
  • ¼ teaspoon ground cinnamon
  • teaspoon kosher salt

The puff pastry bites

  • 2 sheets puff pastry (10×10 inch, thawed)
  • 1 large egg (beaten)
  • 4 ounces Brie cheese (cut into small pieces)

Instructions

  1. Prepare the cranberry sauce by combining cranberries, orange juice, water, honey, cinnamon, and salt in a saucepan and simmering for 10 minutes until thickened.
  2. Roll out the puff pastry into an even square and cut out 48 circles using a biscuit cutter.
  3. Brush each pastry round with egg wash, then top half with cranberry sauce and a piece of brie.
  4. Cover with the remaining pastry rounds, pinch and crimp the edges, and prick with a fork.
  5. Preheat the oven to 375°F and bake the bites for 12 to 16 minutes until golden brown.
  6. Allow to cool for at least 15 minutes before serving.
