Baked Brie Bites with Apricot Jam

Instructions
- Preheat the oven to 375ºF.
- Cut the brie into small wedges and freeze for about 30 minutes.
- For larger bites, cut puff pastry into rectangles, brush with egg mixture, and place a popsicle stick in the center.
- Add brie and apricot jam on top, cover with another pastry rectangle, and seal the edges.
- For smaller bites, cut the pastry into smaller rectangles, add a slice of brie and jam, cover, and seal.
- Place on a baking sheet, brush with egg mixture, and sprinkle with sea salt.
- Bake for 12-20 minutes until golden brown and cool slightly before serving.
