Ingredients

The main ingredients

  • 1 wheel Brie cheese (250-300g)
  • 1/4 cup unsalted butter, melted
  • 1/3 cup red pepper jelly
  • 1/4 cup finely chopped pistachios
  • honey for serving

The wrapping

  • 4 sheets phyllo dough, defrosted

For serving

  • crackers and/or crostini
  • 6-8 small sprigs sugared rosemary
  • 1/2-1 cup sugared cranberries

Instructions

  1. If desired, make the sugared rosemary and cranberries for presentation.
  2. Preheat the oven to 400°F.
  3. Line a baking sheet with parchment paper and melt the butter.
  4. Lay a sheet of phyllo dough on the baking sheet and brush it with melted butter; repeat with 3 more sheets, overlapping them.
  5. Place the brie in the center of the phyllo sheets and add the red pepper jelly on top.
  6. Fold the phyllo sheets over the brie to create a parcel and brush with more melted butter.
  7. Bake for 18-20 minutes until crispy and golden brown.
  8. Let the brie sit for a few minutes, then lift it onto a serving plate.
  9. Garnish with chopped pistachios and honey, and serve with crostini or crackers.
