Instructions
- The night before, preheat the oven and toast the bread until lightly dry.
- Cut the toasted bread in half diagonally and let it cool slightly.
- Butter a casserole dish and prepare a cinnamon-sugar mixture.
- In a large bowl, whisk together the evaporated milk, milk, eggs, maple syrup, vanilla, zest, salt, and remaining cinnamon.
- Arrange the bread slices in the casserole dish and pour the custard mixture over the top.
- Press down lightly on the bread, sprinkle with cinnamon-sugar, and cover.
- Let it sit for 15 minutes or refrigerate overnight.
- The next morning, preheat the oven and bake covered for 20 minutes, then uncover and bake until golden.
- Let it rest for a few minutes, slice, and serve with toppings.
