Ingredients

The French Toast

  • 3 tablespoons granulated sugar
  • 1 ¼ teaspoons ground cinnamon
  • 16 slices 100% whole wheat bread
  • 1 can (12-ounce) fat-free evaporated milk
  • 1 cup 2% milk or whole milk
  • 6 large eggs
  • ¼ cup pure maple syrup
  • 1 tablespoon pure vanilla extract
  • 1 small lemon or ½ orange (zest)
  • ¼ teaspoon kosher salt

For Serving

  • to taste pure maple syrup
  • to taste butter
  • to taste fresh berries
  • to taste Greek yogurt
  • to taste powdered sugar
  • to taste peanut butter

Instructions

  1. The night before, preheat the oven and toast the bread until lightly dry.
  2. Cut the toasted bread in half diagonally and let it cool slightly.
  3. Butter a casserole dish and prepare a cinnamon-sugar mixture.
  4. In a large bowl, whisk together the evaporated milk, milk, eggs, maple syrup, vanilla, zest, salt, and remaining cinnamon.
  5. Arrange the bread slices in the casserole dish and pour the custard mixture over the top.
  6. Press down lightly on the bread, sprinkle with cinnamon-sugar, and cover.
  7. Let it sit for 15 minutes or refrigerate overnight.
  8. The next morning, preheat the oven and bake covered for 20 minutes, then uncover and bake until golden.
  9. Let it rest for a few minutes, slice, and serve with toppings.
