Healthy Overnight French Toast Casserole

Instructions
- 1. Grease a 9x13 inch pan with butter or cooking spray.
- 2. Cut the bread into 1 inch pieces and spread them evenly in the prepared pan.
- 3. Top the bread evenly with blueberries and set aside.
- 4. In a medium bowl, whisk together eggs, milk, maple syrup, cinnamon, and vanilla extract until smooth.
- 5. Pour the egg mixture over the bread and press down to ensure all the bread is saturated.
- 6. Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours or overnight.
- 7. Preheat the oven to 350°F (175°C) the next morning.
- 8. Remove the pan from the fridge and bake for 40-45 minutes until golden brown on top.
- 9. While baking, prepare the glaze by whisking together cream cheese and maple syrup until smooth.
- 10. Serve the casserole warm, drizzled with the glaze and additional maple syrup if desired.
