Ingredients

The casserole

  • 1 loaf whole wheat bread minus heels
  • 2 cups fresh blueberries
  • 8 large eggs
  • 2 ¼ cups milk
  • ¼ cup pure maple syrup
  • ½ teaspoon cinnamon
  • 1 tablespoon vanilla extract

The glaze

  • 8 ounces cream cheese, softened
  • ¼ cup pure maple syrup
  • to taste real maple syrup, optional

Instructions

  1. 1. Grease a 9x13 inch pan with butter or cooking spray.
  2. 2. Cut the bread into 1 inch pieces and spread them evenly in the prepared pan.
  3. 3. Top the bread evenly with blueberries and set aside.
  4. 4. In a medium bowl, whisk together eggs, milk, maple syrup, cinnamon, and vanilla extract until smooth.
  5. 5. Pour the egg mixture over the bread and press down to ensure all the bread is saturated.
  6. 6. Cover the pan with plastic wrap or foil and refrigerate for at least 4 hours or overnight.
  7. 7. Preheat the oven to 350°F (175°C) the next morning.
  8. 8. Remove the pan from the fridge and bake for 40-45 minutes until golden brown on top.
  9. 9. While baking, prepare the glaze by whisking together cream cheese and maple syrup until smooth.
  10. 10. Serve the casserole warm, drizzled with the glaze and additional maple syrup if desired.
