Ingredients

The casserole

  • 1 loaf sourdough bread, cut into 1-inch pieces (about 8 cups)
  • 6 large eggs
  • cups milk of choice
  • ½ cup plain Greek yogurt
  • cup maple syrup
  • 2 tsp vanilla
  • 1 tsp cinnamon
  • 1 cup fresh or frozen berries (strawberries, blueberries, raspberries)

The cream cheese drizzle

  • 4 Tbsp cream cheese
  • 1 Tbsp maple syrup
  • 2-3 Tbsp milk of choice

Instructions

  1. Cut the sourdough bread into 1-inch cubes and arrange in a baking dish.
  2. In a large bowl, whisk together eggs, milk, Greek yogurt, maple syrup, cinnamon, and vanilla.
  3. Pour the egg mixture over the bread, ensuring each piece is coated, then cover and refrigerate for at least 4 hours or overnight.
  4. Preheat the oven to 350°F and remove the casserole from the fridge.
  5. Cover the casserole with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 20-25 minutes until set and golden.
  7. While baking, prepare the cream cheese drizzle by mixing cream cheese, maple syrup, and milk until desired consistency.
  8. Once baked, remove the casserole from the oven, top with fresh berries, and drizzle with the cream cheese mixture.
