Ricotta Berry French Toast Casserole

Ingredients

Brioche Dough

  • 4 eggs beaten
  • ¾ cup butter, melted
  • ¾ cup warm water
  • ¼ cup honey
  • 2 teaspoons salt
  • teaspoons dry active yeast
  • 4 cups flour

Casserole Filling

  • 3 eggs
  • 1 cup whole milk ricotta cheese
  • ¼ cup honey or maple syrup
  • 1–2 cups raspberries and/or blueberries

Instructions

  1. Mix the ingredients for the dough and let it rise for about 2 hours.
  2. Split the dough in half and freeze one half for later use.
  3. Roll out the remaining dough and cut it into bite-sized pieces.
  4. Preheat the oven to 350°F.
  5. Whisk the eggs with ricotta cheese and honey, then combine with the dough pieces and berries.
  6. Transfer the mixture to a greased 9x13 casserole dish and bake for about 30 minutes until golden brown.
  7. Sprinkle with powdered sugar and serve with syrup.
