Ingredients

The parfaits

  • 2 teaspoons light butter
  • 2 cups fresh berries
  • 1 ½ teaspoons cornstarch
  • 2 tablespoons hot water
  • 1 tablespoon white granulated sugar
  • 4 ½ cups plain nonfat Greek yogurt

Optional toppings

  • to taste granola
  • to taste chopped nuts
  • to taste seeds
  • to taste mini chocolate chips
  • to taste additional fresh fruit
  • to taste shredded coconut

Instructions

  1. Melt the butter in a saucepan and add the berries, cooking for about 5 minutes.
  2. Combine cornstarch and hot water in a small dish, then add to the berries with sugar.
  3. Cook until the mixture thickens, then let it cool before refrigerating for about an hour.
  4. To assemble, layer ¾ cup of yogurt with 2 ½ tablespoons of berry sauce in jars.
  5. Repeat until all ingredients are used, seal the jars, and refrigerate.
