Mediterranean Grilled Lamb Kebabs

The marinade

The skewers

top round lamb, cut into 1 ½-inch cubes

red bell pepper, cut into 1 inch pieces

green bell pepper, cut into 1 inch pieces

large red onion, cut into 1 inch chunks

Instructions
- Combine the marinade ingredients in a food processor or blender and pulse until smooth.
- Pat the lamb cubes dry and season with salt and pepper. Combine the lamb and marinade in a dish or bag, toss to coat, and refrigerate for at least 2 hours or up to 24 hours.
- Preheat a grill or grill pan to medium-high heat.
- Thread lamb cubes onto skewers, alternating with pieces of bell pepper and onion.
- Oil the grill pan and cook the skewers, turning every 1 to 2 minutes until the lamb is cooked to your desired doneness, about 7 to 8 minutes for medium.
