Ingredients

Greek Salad Dressing

  • 6 Tbsp olive oil
  • Tbsp fresh lemon juice
  • 1 Tbsp red wine vinegar
  • tsp minced garlic
  • Tbsp finely minced fresh parsley
  • 1 tsp dried oregano
  • ¾ tsp honey
  • to taste salt

Salad

  • 4 medium Roma tomatoes, diced
  • 1 medium English cucumber, optionally peeled and sliced
  • ½ small red onion, thinly sliced or diced
  • 1 small green or yellow bell pepper, chopped
  • ¾ cup kalamata or black olives, drained and sliced
  • 4 oz crumbled feta cheese
  • 1 medium avocado, diced

Instructions

  1. Whisk together all dressing ingredients in a small bowl and season with salt; refrigerate until ready to use.
  2. In a salad bowl, combine tomatoes, cucumber, onion, bell pepper, olives, avocado, and feta.
  3. Drizzle dressing over the salad and gently toss to coat just before serving.
