Healthy Greek Salad

The salad

grape or cherry tomatoes, halved

English cucumber, chopped

green bell pepper, seeded and chopped

red onion, thinly sliced

pitted kalamata olives, halved

feta cheese, chopped into cubes or crumbled
The dressing

olive oil

red wine vinegar

Instructions
- Whisk together all ingredients for the dressing in a bowl or jar until smooth and creamy, then store in the fridge.
- Chop all the vegetables into similar sizes and combine them in a large bowl.
- Just before serving, drizzle the dressing over the salad and gently toss to coat. Season with additional herbs or cracked black pepper if desired.
