Classic Greek Salad

Ingredients

The salad

  • ¼ of a red onion, finely sliced
  • pounds tomatoes (heirloom, cherry, grape, etc.)
  • 1 large English cucumber, cut into half-moons
  • 1 each bell pepper, chopped
  • 12–15 each kalamata olives, pitted and sliced in half
  • 1 tablespoon fresh oregano, finely chopped
  • 2–3 tablespoons fresh dill, chopped
  • 1 clove garlic, finely grated
  • 4–6 ounces feta cheese
  • salt and pepper to taste

The dressing

  • 3 tablespoons red wine vinegar
  • ¼ cup olive oil
  • ¼ teaspoon salt

For garnish

  • fresh herbs for sprinkling
  • olive oil for drizzling
  • cracked pepper or chili flakes optional

Instructions

  1. Marinate the sliced red onion in red wine vinegar and salt while preparing other ingredients.
  2. Cut the tomatoes, cucumber, and bell pepper into bite-sized pieces.
  3. Halve the kalamata olives.
  4. Chop the fresh herbs.
  5. Combine the chopped vegetables and herbs in a bowl with the marinated onions and add grated garlic.
  6. Pour in the olive oil and toss to combine, seasoning with salt and pepper to taste.
  7. Transfer the salad to a serving bowl and top with feta cheese.
  8. Drizzle the feta with olive oil and sprinkle with fresh herbs, cracked pepper, or chili flakes if desired.
