The dressing

red wine vinegar

Instructions
- Marinate the sliced red onion in red wine vinegar and salt while preparing other ingredients.
- Cut the tomatoes, cucumber, and bell pepper into bite-sized pieces.
- Halve the kalamata olives.
- Chop the fresh herbs.
- Combine the chopped vegetables and herbs in a bowl with the marinated onions and add grated garlic.
- Pour in the olive oil and toss to combine, seasoning with salt and pepper to taste.
- Transfer the salad to a serving bowl and top with feta cheese.
- Drizzle the feta with olive oil and sprinkle with fresh herbs, cracked pepper, or chili flakes if desired.
