Ingredients

The salad

  • 12 ounces Romaine Lettuce, chopped or torn
  • 1 medium tomato, cut into wedges
  • 4 ounces cucumber, sliced
  • 2 ounces feta cheese, crumbled
  • 20 pieces Kalamata Olives
  • 1 ounce red onion, thinly sliced
  • optional pepperoncini peppers

Greek Vinaigrette Dressing

  • ½ cup olive oil
  • ¼ cup lemon juice
  • 2 tablespoons water
  • 1 tablespoon minced shallot
  • ½ teaspoon garlic, grated
  • ½ teaspoon dried oregano, rubbed
  • ¼ teaspoon dried marjoram, rubbed
  • ¼ teaspoon salt
  • teaspoon pepper
  • 2 teaspoons low carb sugar (or Swerve Granulated, or sugar, or honey)

Instructions

  1. Prepare the Greek vinaigrette by shaking all dressing ingredients in a jar or blending them until emulsified.
  2. Wash and chop or tear the lettuce, then place it in a large bowl or individual serving bowls.
  3. Slice the cucumber, tomato, and onion, and arrange them evenly over the lettuce.
  4. Top the salad with Kalamata olives, feta cheese, and any additional ingredients.
  5. Drizzle the vinaigrette over the salad or toss to combine before serving.
