Ingredients

The salad

  • 2 hearts romaine lettuce
  • 1 cup bell pepper
  • ¼ cup red onion
  • 1 cup cherry tomatoes
  • 1 cup cucumber
  • 1 cup garbanzo beans (chickpeas)
  • ½ cup kalamata olives
  • ½ cup feta cheese

The dressing

  • 1 clove garlic
  • 1 teaspoon dried oregano
  • ¼ cup lemon juice
  • ¼ cup red wine vinegar
  • cup extra virgin olive oil
  • ½ teaspoon dijon mustard
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Chop the romaine lettuce and place it in a large bowl.
  2. Layer the chopped bell pepper, red onion, cherry tomatoes, cucumber, chickpeas, olives, and feta cheese over the romaine.
  3. In a small jar, combine garlic, oregano, lemon juice, and red wine vinegar.
  4. Slowly whisk in the olive oil and season with salt and pepper.
  5. Drizzle the dressing over the salad just before serving.
