Ingredients

The chicken

  • 6 pieces boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • to taste salt
  • to taste pepper
  • 2 teaspoons Italian seasoning

The sauce

  • 1 cup chicken broth
  • ¼ cup soy sauce
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons minced garlic
  • 2 tablespoons cornstarch
  • 1 tablespoon butter
  • 2 tablespoons chopped parsley

Instructions

  1. Heat 1 tablespoon of olive oil in a pan over medium-high heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning, then sear them for 4-5 minutes per side until golden brown.
  3. Place the chicken in a slow cooker.
  4. In a small bowl, mix the remaining olive oil, chicken broth, soy sauce, balsamic vinegar, brown sugar, and garlic.
  5. Pour the sauce over the chicken in the slow cooker.
  6. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
  7. Remove the chicken and keep it warm under foil.
  8. Pour the cooking liquid into a pot and bring it to a simmer.
  9. Mix cornstarch with ¼ cup of cold water and add it to the pot, bringing it to a boil for 1 minute until thickened.
  10. Add butter to the sauce and stir until melted, then pour the sauce over the chicken and garnish with parsley.
