Instructions
- Heat 1 tablespoon of olive oil in a pan over medium-high heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning, then sear them for 4-5 minutes per side until golden brown.
- Place the chicken in a slow cooker.
- In a small bowl, mix the remaining olive oil, chicken broth, soy sauce, balsamic vinegar, brown sugar, and garlic.
- Pour the sauce over the chicken in the slow cooker.
- Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
- Remove the chicken and keep it warm under foil.
- Pour the cooking liquid into a pot and bring it to a simmer.
- Mix cornstarch with ¼ cup of cold water and add it to the pot, bringing it to a boil for 1 minute until thickened.
- Add butter to the sauce and stir until melted, then pour the sauce over the chicken and garnish with parsley.
