Slow Cooker Garlic Butter Whole Chicken with Gravy

Instructions
- Make the garlic butter by processing garlic and parsley, then mixing with softened butter and salt.
- Prepare the chicken by removing giblets and patting it dry.
- Loosen the skin of the chicken and stuff the garlic butter mixture under the skin.
- Place half of the garlic head inside the chicken cavity.
- Tie the chicken legs together with kitchen twine.
- Create a foil rack and place it in the slow cooker, then place the other half of the garlic head in the bottom.
- Put the chicken breast down on the foil rack and cover.
- Cook on low heat for 4-5 hours or until the internal temperature reaches 160º F.
- Flip the chicken to breast up, brush with oil, and broil until the skin is crispy.
- Make the gravy by whisking flour into the drippings and adding chicken stock, cooking until thickened.
- Carve the chicken and serve with gravy.
