Slow Cooker Garlic Butter Whole Chicken with Gravy

Ingredients

The chicken

  • ¼ cup fresh parsley
  • 3 cloves garlic (peeled)
  • 4 tablespoons unsalted butter (softened)
  • 1 teaspoon salt (plus more)
  • 1 head garlic (sliced in half crosswise)
  • 1 3-4 pound whole chicken (giblets removed)
  • 1 tablespoon avocado or olive oil
  • aluminum foil
  • kitchen twine
  • pastry brush

The gravy

  • 3 tablespoons cassava flour or all-purpose flour
  • ½ cup chicken stock

Instructions

  1. Make the garlic butter by processing garlic and parsley, then mixing with softened butter and salt.
  2. Prepare the chicken by removing giblets and patting it dry.
  3. Loosen the skin of the chicken and stuff the garlic butter mixture under the skin.
  4. Place half of the garlic head inside the chicken cavity.
  5. Tie the chicken legs together with kitchen twine.
  6. Create a foil rack and place it in the slow cooker, then place the other half of the garlic head in the bottom.
  7. Put the chicken breast down on the foil rack and cover.
  8. Cook on low heat for 4-5 hours or until the internal temperature reaches 160º F.
  9. Flip the chicken to breast up, brush with oil, and broil until the skin is crispy.
  10. Make the gravy by whisking flour into the drippings and adding chicken stock, cooking until thickened.
  11. Carve the chicken and serve with gravy.
