Slow Cooker Whole Chicken

Ingredients

The chicken

  • 5-6 pounds whole chicken, giblets removed
  • Salt to taste salt
  • ½ unit lemon, sliced
  • 2 tablespoons Creole seasoning

The vegetables

  • 1-2 stalks celery, cut in chunks
  • 5-6 cloves garlic, smashed
  • 3 medium carrots, peeled and cut into thick chunks
  • 1 sprig thyme
  • 2 bay leaves bay leaves
  • 1 large onion, sliced
  • 5-6 medium red potatoes, cut in half
  • ½ tablespoon bouillon powder (optional)

Instructions

  1. Remove giblets from the chicken, rinse it, and pat dry.
  2. Rub the chicken inside and out with salt, pepper, and bouillon powder. Stuff it with garlic and lemon, then refrigerate for at least 2 hours or overnight.
  3. When ready to cook, place sliced onions and smashed garlic in the bottom of the slow cooker.
  4. Add the chicken breast side up over the onions.
  5. Tuck potatoes, celery, and carrots around the chicken, and add thyme.
  6. Cover and cook on HIGH for 2½ to 3½ hours, or on LOW for 4 to 5 hours until the chicken reaches the correct internal temperature.
  7. If desired, broil the chicken for 5-8 minutes for crispy skin.
  8. Let the chicken rest for 10 minutes before carving.
