Slow Cooker Whole Chicken

Instructions
- Remove giblets from the chicken, rinse it, and pat dry.
- Rub the chicken inside and out with salt, pepper, and bouillon powder. Stuff it with garlic and lemon, then refrigerate for at least 2 hours or overnight.
- When ready to cook, place sliced onions and smashed garlic in the bottom of the slow cooker.
- Add the chicken breast side up over the onions.
- Tuck potatoes, celery, and carrots around the chicken, and add thyme.
- Cover and cook on HIGH for 2½ to 3½ hours, or on LOW for 4 to 5 hours until the chicken reaches the correct internal temperature.
- If desired, broil the chicken for 5-8 minutes for crispy skin.
- Let the chicken rest for 10 minutes before carving.
