Crockpot Whole Chicken

The chicken

whole chicken, giblets removed

The vegetables

yellow onion, peeled and quartered

anaheim pepper, halved and seeded

garlic, peeled and smashed

Italian flat leaf parsley
Instructions
- Rinse the chicken well and pat dry.
- Mix kosher salt and paprika, then season the chicken generously with the mixture and black pepper.
- Scatter the vegetables in the bottom of the slow cooker and place the seasoned chicken on top.
- Cook on high for 4-5 hours or low for 8-9 hours, until the chicken reaches an internal temperature of 165°F.
- Remove the chicken from the slow cooker and let it rest for 5-10 minutes before serving.
