Crockpot Whole Chicken

Ingredients

The chicken

  • 1 5 pound whole chicken, giblets removed
  • 1 tablespoon kosher salt
  • ½ teaspoon paprika
  • Freshly ground to taste black pepper

The vegetables

  • 8 ounces baby carrots
  • 4 large red potatoes, halved
  • 1 large yellow onion, peeled and quartered
  • 1 large anaheim pepper, halved and seeded
  • 6-8 cloves garlic, peeled and smashed
  • 1 handful Italian flat leaf parsley

Instructions

  1. Rinse the chicken well and pat dry.
  2. Mix kosher salt and paprika, then season the chicken generously with the mixture and black pepper.
  3. Scatter the vegetables in the bottom of the slow cooker and place the seasoned chicken on top.
  4. Cook on high for 4-5 hours or low for 8-9 hours, until the chicken reaches an internal temperature of 165°F.
  5. Remove the chicken from the slow cooker and let it rest for 5-10 minutes before serving.
