Slow Cooker Whole Chicken

Ingredients

The chicken

  • 1 (4 to 5 pound) whole chicken

The spice blend

  • 2 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 ½ teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt salt
  • to taste black pepper freshly ground black pepper

Instructions

  1. Prepare the chicken by removing giblets and patting it dry.
  2. Mix olive oil, paprika, thyme, garlic powder, onion powder, salt, and pepper in a bowl to create a paste.
  3. Rub the spice mixture all over the chicken and truss if desired.
  4. Place the chicken in the slow cooker.
  5. Cover and cook on HIGH for 3 to 4 hours or LOW for 6 to 8 hours until the internal temperature reaches 165°F.
  6. For crispy skin, broil the chicken in the oven for 7 to 10 minutes after cooking.
  7. Let the chicken rest for 15 minutes before carving and serving.
