Instructions
- Combine marinade ingredients in a bag, add chicken, and marinate for 1 to 8 hours.
- Cook marinated chicken on a grill or skillet for 5-6 minutes per side until done, then cut into cubes.
- Blend peanut sauce ingredients in a food processor until smooth, adding salt and pepper to taste.
- Warm tortillas in the microwave, then assemble tacos with cabbage, carrots, cucumber, chicken, peanut sauce, and cilantro.
- Serve immediately with lime wedges if desired.
