Thai Chicken Tacos

Ingredients

The filling

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 3 Tbsp rice vinegar
  • 1 Tbsp soy sauce
  • salt and pepper
  • 2 Tbsp olive oil
  • 2 cups shredded cabbage
  • 1 cup bean sprouts
  • ½ cup Thai peanut sauce, homemade or storebought
  • 1 cup chopped fresh cilantro
  • ½ cup thinly sliced green onions

The tortillas

  • 4–6 small tortillas

Instructions

  1. Marinate the chicken with rice vinegar and soy sauce for 15 minutes to 4 hours.
  2. Heat olive oil in a large saucepan over medium-high heat.
  3. Remove chicken from marinade and sauté in the pan, seasoning with salt and pepper, until cooked through (5-7 minutes).
  4. Lay out tortillas and fill each with shredded cabbage, bean sprouts, and cooked chicken.
  5. Drizzle with Thai peanut sauce and top with cilantro and green onions.
  6. Serve immediately.
