Ingredients

For the bread

  • ¾ cup plain Greek yogurt
  • 2 large eggs
  • cup pure maple syrup
  • 2 tbsp oil (avocado oil recommended)
  • 2 tbsp fresh lemon juice
  • Zest of 2 large lemons lemon zest
  • 1 ¼ cups packed almond flour
  • 1 ¼ cups oat flour
  • 1 tsp baking soda
  • ¼ tsp fine sea salt
  • 4 tsp poppy seeds

For the glaze

  • cup powdered sugar
  • 1 tbsp fresh lemon juice

Instructions

  1. Preheat the oven to 350°F and prepare a 9x5 inch loaf pan.
  2. In a large mixing bowl, whisk together yogurt, eggs, maple syrup, oil, lemon juice, and lemon zest until smooth.
  3. Add almond flour, oat flour, baking soda, salt, and poppy seeds, mixing until just combined to form a thick batter.
  4. Spoon the batter into the prepared pan and bake for 35-40 minutes until a knife comes out clean.
  5. While the bread is baking, prepare the glaze by whisking powdered sugar and lemon juice until smooth.
  6. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Once cool, drizzle the glaze over the bread, slice, and enjoy.
