Ingredients

The rolls

  • 4 each 8 inch multigrain tortillas
  • 8 large leafy green lettuce leaves
  • 1 cup hummus
  • 4 slices sharp cheddar cheese
  • 1 cup thinly sliced red bell pepper
  • 1 cup thinly sliced cucumber
  • 1 cup shredded purple cabbage
  • 1 cup matchstick carrots
  • 1 cup broccoli sprouts

The dressing

  • 1 each avocado
  • 1 Tbsp fresh grated ginger
  • 1 clove garlic
  • ½ cup cilantro leaves
  • 2 Tbsp lime juice
  • 3 Tbsp olive oil
  • ¼ to ½ cup water
  • a pinch salt

Instructions

  1. Spread hummus on each tortilla and layer with lettuce leaves, cheddar cheese, and veggies.
  2. Roll up the tortillas tightly and secure with a toothpick if desired.
  3. Slice the rolls into bite-sized pieces or in half to serve as a wrap.
  4. To make the dressing, blend avocado, ginger, garlic, cilantro, lime juice, and salt until combined.
  5. Slowly add olive oil and water while blending until smooth.
  6. Drizzle dressing over the rolls or store in an airtight container until ready to serve.
