The dressing

Instructions
- Spread hummus on each tortilla and layer with lettuce leaves, cheddar cheese, and veggies.
- Roll up the tortillas tightly and secure with a toothpick if desired.
- Slice the rolls into bite-sized pieces or in half to serve as a wrap.
- To make the dressing, blend avocado, ginger, garlic, cilantro, lime juice, and salt until combined.
- Slowly add olive oil and water while blending until smooth.
- Drizzle dressing over the rolls or store in an airtight container until ready to serve.
